After been named Jim Murray's World Whiskey of the Year in 2020, the demand for Full proof and Full proof single casks from 1792 has been steady. Now Whiskey Hunt Australia together with BRASS have landed their own barrel. Founded in 2020, the Bourbon Rye Australia Sipping Society is a Facebook group of passionate American whiskey fans who share news and tasting notes. Two years waiting and their whiskey is finally here - an eight year old overproof expression of the standard 1792 bottling, but hand picked from a selection of samples. It's good bourbon, plain and simple, albeit on the woodier side. The nose is packed with caramel and pecan pie leading into drier notes of oak shavings, peppermint rock candy and a slightly terpenic character that suggests pine buds or green wood. In the mouth it delivers the kind of dense, oily whiskey you almost chew through uncut, yet there's complexity enough; caramel fudge, banana cake, peach flan and bittersweet oak emerge along side more subtle notes of liquorice all-sorts and maraschino. Cinnamon, clove and nutmeg enliven and lengthen the finish. Add water and the experience is dulled so you lose a lot of the nuance. This is best as a slow sipper, meaning it would be wasted on friends who'll drown it in Coke. Pour it over a couple of ice cubes, sit back and relish the flavours that unfold. Distilled in 2014 and bottled at full proof in late 2022, the barrel yield was 156 bottles at 62.5% Alc.Vol without chill filtration.
