A Girvan approaching peak maturity. All the usual suspects are present - heady vanillas, caramels, hints of bourbon and gold rum, but the sugars are checked by herbal teas (chamomile) and hints of green apples. Tasted after ample air contact, the palate softens and richens up like a fat, buttery Chardonnay. If sweet grains are your thing, this turns out to be a classically lush and well-rounded expression, right through to the fine-tuned sweet/dry ending that finishes like a great wine. 52.9% Alc./Vol. Non chill filtered. 107 bottles from an ex-Bourbon hogshead.
