Distilled at the Cooley Distillery (home to brands like Connemara, Tullamore Dew and Tyrconnell, amongst others), while the aromas need plenty of coaxing to blow off the alcohol, this offers a delicious, mouth-coating arrangement of ripe pears and apples, beeswax and vanilla bean punctuated by bittersweet wood spices, semi-ripe pineapple and hints of banana cake in a prolonged finish. It's a great Irish, with the added allure of being finished in a Caribbean rum cask. Tasted from a 20ml sample. Bottled at natural strength and non chill filtered. 53.8% Alc./Vol.
