2008 Clover Hill Methode Traditionelle Brut

This renown Tassie sparkling pours well with a white frothy mousse that has good hold. Once dissipated it reveals a pale straw coloured base with pale gold edges. Exceptionally fine bead showing very good persistence. The nose displays good intensity with baked bread and yeast lees top notes overlaid with some toasty characters followed by some subtle cashew and citrus end notes. The palate delivers mouthfilling flavours of baked bread, some toastiness, citrus, yeast lees and cashew with an almost creamy like mouthfeel. Clean dry finish with long aftertaste of yeasty baked bread, toast and cashew.
Drink over the next 4-5 years (2013-2018).
