2008 Signatory Vintage Exclusive Selection Ink #4 Collection Single Cask Deanston 14 Year Old Single Malt Scotch Whisky (700ml)

Another European label that's part of the INK #4 series, selected from Signatory Vintage's warehouses exclusively for French retailer, Le Comptoir Irlandais. Deanston is a relative newbie, established in 1965 and positioned in the south of the Highlands in a former cotton weaving factory bordering the River Teith. This young venture wants to be traditional and prides itself on ancestral methods and local ingredients. Fermentation is particularly slow. It takes one hundred hours to develop fresh, fruity and gently honeyed notes that sometimes acquire a gingery/grassy character. Organically grown barley is increasingly preferred. 15% of production is used for singles, the rest for blends, liqueurs and whisky creams. This edition was full-term matured in first fill sherry butt #900079. 46% Alc./Vol. Non chill filtered.

Notes from the bottlers... Nose: lively, notes of toast, cereals, malty and spicy aromas, fine and elegant oak. Mouth: very round in the mouth, the barley stands out clearly. Finish: thick and cereal.
