2015 Dowie Doole Estate Cabernet Sauvignon

Totally opaque black dark red colour with a dark red hue. Nosing reveals a combination of blackcurrant and plum scents which run into a hint of liquorice, cedary tobacco characters and spice. Medium weight the palate carries flavours of red and black currants, mulberries, cedary tobacco characters, black olives and spice. Dryish finish with sturdy yet fine grained tannins. Aftertaste of blackcurrant, mulberries, cedary tobacco characters, black olives and spice.

Four parcels of fruit, crushed and cold-soaked 3-5 days, fermented separately in 'Fat Boy' fermenters with daily pumpovers, 5-10 days post-ferment maceration, matured in French hogsheads (23% new) for 18 months.
