2016 Domaine William Fevre Vaillons Chablis Premier Cru
Brilliant pale straw colour with a subtle greenish tinge around the edges and a watery hue. Lifted pear, green apple and citrus aromas laced with light dried honey, biscuit and fresh herb infusions are followed by stony mineral characters. Possessing good richness pear and citrus flavours dominate over traces of dried honey, wet stones and delicate infusions of herbs. Nicely rounded mouthfeel finishing dry with vibrant acidity. Medium to long aftertaste of pear, citrus, faint dried honey, stony mineral characters and traces of biscuity cashew.
Drink over the next 4-5 years.

(just 23 hectoliters per hectare produced): Pale yellow. A touch of mineral reduction to the aromas of apple, white peach and iodine. Silky and dense on entry, then creamy and deep in the middle, but with good saline mineral punch giving the wine an impression of thrust. The very long, bright, rising finish features a musky suggestion of quinine. With its concentration and balance, this is a superb premier cru in the making.
