2019 Ellis Wines Signature Label Shiraz
A family owned and run venture, Ellis wines was established in 1999 and for 10 years they sold their fruit off to other wineries before establishing their own label in 2009. In only a relatively short period of time they have built a reputation for producing high quality Heathcote Shiraz grown on the regions famous Cambrian soils. Today the vineyard has grown to over 123.5 acres in size.
Matured in a mixture of French and American oak barrels for 18 months. Pitch black core with a dark red black tinged hue. Potent aniseed, dark plum and black cherry scents fill the nostrils complimented by some toasty vanillin oak, fennel and peppered earth notes. Rich aniseed, dark plum and black cherry fruits carry ample flesh across the medium to full bodied palate with notions of toasty vanillin oak, fennel and peppered earth the underbelly. Sturdy tannin construction with a lengthy finish that has a lingering toasty oak component running through it.
Drink over the next 4-5 years.

A rich, oak-influenced style in keeping with the producer's style of red-wine making which demands further bottle ageing. Tight and focused, it delivers a complex array of scents and flavours, of clove, cardamon spice, violet with a thread of herbal complexity before settling into a solid core of plums, blueberries and cassis. The overarching influence of oak resonates in tandem with burly tannins. Drink by 2031.
