2021 Ciavolich Fosso Cancelli Percorino
The grapes are from estate vineyards in Pianella and Loreto Aprutino, using the traditional ‘pergola Abruzzese’ trellising, which are harvested by hand and placed in small crates to transport to the cellar. Crushing and pressing are carried out with a small crusher-de-stemmer and a very old family press. The must is transferred into terracotta amphorae and used French oak tonneaux. To start fermentation, a ‘pied de cuve’ of indigenous yeasts obtained from the same grapes is added. Fermentation normally takes 8–10 days and the wine is racked and aged on its noble lees in 15-hectolitre Slavonian oak barrels and terracotta amphorae. The wine is aged for about 2 years, after which it is racked and bottled without filtration.
Bright yellow straw colour with pale gold tinged edges and a watery hue. Pear and red apple skin aromas fill the nostrils with hints of lime, quince, fresh herbs and wet stone also evident. Delicious pear, lime and red apple skin flavours decorate the palate with a river stone like feel. Infusions of fresh herbs, delicate quince and almond characters linger through the dry finish. Brisk, energetic acidity concluding fresh and elegant.
Drink over the next 4-5 years.
