2021 Denton Chardonnay

Denton is owned and operated by father & son, John & Simon Denton. With their combined experience in architecture & hospitality, they established the property in 1996 and planted the vineyard between 1997 & 2004. The "View Hill" vineyard is situated in Yarra Glen on an isolated hill set over granitic sandy soil on a north-facing aspect. Luke Lambert has overseen winemaking since 2015, contributing his years of Yarra Valley experience making great Chardonnay & Pinot Noir. 

Chardonnay is grown on a North Eastern slope where it receives more gentle morning sunlight, and does not see so much of the afternoon heat. The fruit is whole-bunch pressed to four French Oak Puncheons for fermentation by indigenous yeast, followed by a natural malolactic fermentation. The cool 2021 growing season has resulted in a wine of great freshness, with stone fruit and white florals framed by minerality and a phenolic grip.
