2021 Domaine Garnier & Fils Mont de Milieu Chablis Premier Cru

Based in Ligny-les-Chatel on the northern fringe of the Chablis appellation, Domaine Garnier & Fils has been family owned since 1789 with brothers Jerome and Xavier Garnier currently overseeing the winemaking and management. Jerome works the vineyards, while Xavier makes the wines, and together they are leading a group of newer producers finding their voice in the northern most part of Chablis. Organic farming is practiced in the vineyards, and fermentation occurs with natural yeasts before the wines are matured in a mix of very large barrels and stainless steel tanks.
Brilliant pale straw colour with straw green tinged edges and a watery hue. Jumping out of the glass are scents of pear infused with a mix of wet stone and smoky mineral notes. Hints of dried honey and oyster shell follow on. Delicious pear and lime fruits carry lovely textural shape across the palate with notions of wet slate, subtle dried honey and flinty oyster shell like characters lurking underneath. Brisk integrated acidity. Excellent concentration with the long, well proportioned finish infused with a saline like minerality.
Drink over the next 4-5 years.
