2021 Domaine Garnier & Fils Vaillons Chablis Premier Cru

Based in Ligny-les-Chatel on the northern fringe of the Chablis appellation, Domaine Garnier & Fils has been family owned since 1789 with brothers Jerome and Xavier Garnier currently overseeing the winemaking and management. Jerome works the vineyards, while Xavier makes the wines, and together they are leading a group of newer producers finding their voice in the northern most part of Chablis. Organic farming is practiced in the vineyards, and fermentation occurs with natural yeasts before the wines are matured in a mix of very large barrels and stainless steel tanks.
Brilliant pale straw colour with a subtle tinge of green around the edges and a watery hue. Intense pear and lime aromas carry with them an oyster shell like minerality followed by some delicate dried honey and wet stone notes. A touch fuller and rounder than the Fourchaume and Mont de Milieu yet still retaining good underlying minerality, it features a concentrated flavour profile of fleshy pear and lime fruits which meld into a stony mineral infused back drop. Delicate fresh herb elements and traces of dried honey are also evident. Slightly gentler acidity leads into a long finish that has a more voluminous feel than the other two Premier Cru wines.
