2021 Jim Barry Cover Drive Cabernet Sauvignon
An elegant yet well fleshed Cabernet with a dryish, dusty red fruited finish.
Made from a blend of Coonawarra and Clare Valley fruit. Dense midnight black heart with a deep dark red black tinged hue. The nose is flooded with red to black currant and mulberry aromas which are complimented by some cedary tobacco, dusty earth, black olive and bay leaf notes. Rich blackcurrant and ripe mulberry fruits carry ample flesh yet are elegant in their feel, backed by a sturdy tannin structure. Dusty earth, black olive, cedary tobacco and bay leaf infusions lie underneath. Dryish, dusty red fruited finish.
Drink over the next 5-6 years.

Concentrated blackcurrant and plum aromas rush from the glass, followed by toastier, oak-derived ones like cedar and mocha. It's a big, powerful wine with sculpted tannins and pert acidity. The oak is present but not overwhelming. Pop this in a decanter if drinking any time soon, but should open and settle over the next decade.
