2021 Paxton Quandong Farm Single Vineyard Shiraz

Certified biodynamic and organic this Shiraz was matured in a mix of new and mature French oak puncheons for a period of 12 months. Dense inky black in colour with a bright dark red black tinged hue. Blackpepper infused ripe blackberry and liquorice scents jump out of the glass followed by some smoky vanillin cedar and spicy fennel notes. Rich, plush blackberry, dark plum and liquorice fruits have an underbelly of fresh acidity and polished tannins. Subtle smoky vanillin cedar, earthy fennel and blackpepper elements ensue. Excellent concentration finishing long, refined and peppery.
Drink over the next 6-8 years.
