2021 William Fevre Petit Chablis
Founded by William Fevre in 1957 the domaine has grown to now become one of the biggest land owners in Chablis with 78 hectares of prestigious vineyards, of which 15.9 hectares are classified as Premiers Crus and 15.2 as Grand Crus. The Petit Chablis was matured in stainless steel vats for a period of 8-10 months to preserve freshness.
Brilliant pale straw colour with a subtle greenish tinge to the edges and a watery hue. Rising out of the glass are lifted pear and lime scents followed by some green apple, wet slate, fresh herb and mineral notes. Racy flavours of lime and green apple infused with fresh herbs are sprawled across the mouth watering palate. Tense, chalky feel with wet slate and flinty mineral accents lying underneath. Finishes dry with brisk acidity and a crisp slatey mineral laced aftertaste.
