2022 Domaine Billaud-Simon Les Vaillons Chablis Premier Cru
Other Reviews....
An overtly floral-suffused nose reflects notes of sea breeze, zest confit and a whiff of white pepper. There is more refinement if not necessarily better density to the beautifully textured medium-bodied flavors that possess better depth on the lightly austere, structured and lingering finale. While it should repay a decade or so of keeping, it should also be reasonably approachable after only 4 to 5 years. Drink through 2029+.

Pale lemon colour. Just a little bit smoky yet pleasingly marine as well. Very crunchy saline finish, 2022 is more classic for Vaillons than 2023. White fruit with the lightest of saline lemon rinses. Drink from 2026-2032.

Plenty of ripe sunny fruit here. Crisp acidity, lovely purity, one for relatively early drinking. Salty edge to finish. From six plots spread across Vaillons, harvested at separate times. Fermented individually, blended in August, then aged for several months. To be bottled at the end of 2023. Drink 2024-2028.
