Wild yeast fermented in French oak hogsheads of which 30% were new. Brilliant pale straw to straw colour with greenish tinged edges and a watery hue. Lifted apricot and peach aromas mix with lemon butter, bees wax and spicy nougat notes. Citrusy peach like fruits drive the palate with notions of lemon butter and spice also present. Tangy like acidity with a lively mid length finish.
Drink over the next 1-2 years.
