2023 Mayer Dr Pinot Noir

German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard. Vines are often close-planted, and winemaking frequently utilises a generous use of whole bunch.
Described as giving it the "full beans", this is the 100% whole bunch version of Timo's trademark Pinot Noir. A wild ride on the Timo train, the Dr Pinot has all the sweet and sour, stalky and spice notes that had everyone swooning when his wines first hit the market.

This is 100% whole bunch here. Has ten days carbonic, ten days macerated after that.
Big perfume of black cherry, green olive, undergrowth, black pepper, rosemary and fennel. Good start. Feels plush yet crunchy, with more dark cherry, lots of black pepper, paprika spice, black olive in brine and clove-woody spice. Fine tannins chime in, a wrap and building to a fine pucker. You can see this having a long and interesting future too. Gorgeous. Drink: 2024-2040.
