2023 Stargazer Chardonnay

The 2023 Chardonnay was sourced from two distinct vineyards. The first, their own vineyard, Palisander, was planted in 2017 and has a south-facing orientation. The second vineyard, located in the town of Ouse in the Derwent Valley, was planted in 1999 and faces northeast. The grapes were hand-picked and pressed directly into 500L French oak barrels (with 20% being new), where they underwent wild fermentation and full malolactic conversion. The wine matured on lees in these barrels for 8 months before being transferred, racked, and blended in a tank for an additional 10 weeks prior to bottling.
