German born Timo Mayer, along with partner Rhonda Ferguson established Mayer in 1999, on the slopes of Mt Toolebewong, between Healesville & Woori Yallock. They produce a small range of hand crafted, single vineyard wines, believing that wines are made in the vineyard and not the winery. All wines are unfined and unfiltered to show the true expression of the vineyard. Vines are often close-planted, and winemaking frequently utilises a generous use of whole bunch.
Timo sources his Syrah from a small portion of the Bloody Hill vineyard, and uses 100% whole bunch fermentation for his trademark vivid, stalky aromatics. Intense and flavourful, with plentiful texture and tannin, balanced by fresh acidity.

The multifaceted nature of Australian shiraz (syrah) is really great. Mayer has always been distinct.
This is squelchy, kind of warm, ripe fruited, laced with white pepper, game meat and grilled red capsicum, touches of anise, some cardamom. Lots on it seems, though you’d say that the softness and spread in texture is a little overt, a little macho and broad. Though flavours are laced with a little white balsamic lift, fresh (!), great, there’s a richness that kind of distinguishes the wine and takes some energy away, perhaps. There’s gunna be easy fans here, but perhaps when the quill and ink is out, there’s some quibble around some detail here in finding a full balance of things. Drink 2025-2032.
