Azimut Brut Nature Rosat Cava

"Azimut" is the project of Assis Suriol, who in 2000 returned to his ancestral family vineyards to create a wine that would allow his family to live on the land, and farm in an organic, biodynamic, and sustainable manner. The idea is to make their wine as close to the grape as possible, creating a fresh and immensely drinkable experience. This Organic Rose Cava is produced from 50% Grenache & 50% Mourvedre from the limestone-rich soils of Penedes in Catalunya. The wine is aged for 10 months in bottle on lees and is disgorged on order (without any dosage), resulting in a dry and complex sparkling with a delicate bouquet of strawberries.
