Blackwater Juniper Cask Irish Gin (500ml)

A novel Irish gin that's barrel aged in 50 litre juniper wood casks. It uses the same 12 botanicals found in Blackwater No.5, but in a slightly different proportion; orange and the sweeter roots are increased, because, like its berries, juniper timber can be a wee bit astringent.

Tasting note: Pale gold. First pass finds an attractive mingling of juniper and wood notes, in particular fresh sawn green pine, balsa wood…later, crushed pine needles, dried lemon peel, thyme, black pepper. Light to medium bodied flavours find juniper framed by citrus peel, drying herbal teas, warming black pepper and fine tannins. Concludes nicely balanced, gently warming and medium long.
