You might think of Pastis as a French specialty, but anise has been used by Mediterranean civilizations as an ingredient in alcoholic beverages since ancient times. Its cultural connections with the Piedmont region are also strong. Produced by Bordiga for nearly a century, their version is described as light and dry, with a defined salinity and herbaceousness. Some go as far to say that very few of the commercial French versions - or even the artisanal ones - match it for complexity and quality. Derived from a blend of botanicals including star anise, licorice root, wild fennel seed, gentiana lutea (roots), gentiana acaulis (flowers) and wild thyme flowers, the fruity / herbal / floral notes work to balance its pronounced anis character. Traditionally consumed as an aperitif with a ratio of 4:1 water (sometimes with the addition of a drop of mint, barley or grenadine syrup), or use it as a sub for absinthe. 45% Alc./Vol.
