Gordo Blanco plays an important part in the production of this type of sherry and so it is with this wine, where we see fermentation halted at the required level of sweetness by the addition of natural grape spirit. The grapes are harvested at their peak of ripeness to achieve this level of flavour. Blending through a wood solera usually follows to develop a more developed and constant style.This attractive sweet sherry displays a brilliant old gold colour and has rich bouquet of developed fruit and fine spirit. On the palate there is excellent harmony between the intensity of the sweet fruit and the residual sweetness of the wine.At bottling this wine had a Baumé of 6.9, an acid level of 3.3 gr/L, a pH of 4.02 and an alcohol of 18.0%.As well as an aperitif wine, it is enjoyable as an after dinner drink or as a night cap. Serve at room temperature or chilled, according to taste. This wine is a particularly good partner for the hearty soups served in winter such as ox-tail or minestrone. It is also equally good after dinner with a platter of dried fruits, nuts and fruit cake with coffee.
