Another specialty from the Carthusian monks is this delicately bitter elixir made from the maceration and distillation of gentian root and other botanicals in a fortified wine base. Besides making the world famous Yellow & Green Chartreuse, having been distillers for four centuries, they've perfected a formula derived from several macerations and distillations. A suitable substitute for Suze, this is described as having a strong, gentian-forward earthy bitterness balanced by a sweeter orange note. Try it in a long drink with blackcurrants or cassis liqueur, mixed with soda, or as a substitute for vermouth in a White Negroni. 22.7% Alc./Vol. Big one litre format.
