Dassai 23 Junmai Daiginjo Sake (720ml)
Brewed by Asahi Shuzo based in Yamaguchi Prefecture, Dassai focus on high quality, supremely modern Junmai Daiginjo sake using only Yamada Nishiki rice. Dassai are also unique in the industry having adapted their methods and brewery to be able to brew year round.
Tasting Note: Pours a pale, water white colour in the glass. Supremely elegant on the nose, showing honeysuckle, white strawberry, watermelon rind, along with subtle cream and nougat. Likewise the palate is equally elegant and pure, with green melon and white strawberry sitting alongside pastry, nougat, panna cotta, and vanilla notes. Extremely refined, and with more than a passing resemblance to a crisp white wine, serve this sake chilled on its own or along with fresh dishes such as squid or red snapper sashimi.

The medium dry Asahi Shuzo NV Dassai 23 Junmai Daiginjo should be one of the lowest Seimaibuai (23%) sakes in Japan. It is pure and clean, with light but complex scents of white flowers, cherry, strawberry, banana and fresh rice. On the palate it is broad and smooth with a clean spicy finish. Rice: Yamada Nishiki. Alcohol: 16%.

From Japan’s far west beyond Hiroshima, Dassai produces only junmai daiginjo in three main styles; 23, 39 and 50, reflecting their respective polishing ratios. This lovely aromatic daiginjo displays plenty of intense, fragrant floral and melon notes, fresh without the unpasteurised zing of nama sake. It is smooth and richly flavoured with melon, pear, peach and touches of coconut and cinnamon. There is a lovely rich texture and elegant, long dry finish.
