De Bortoli Sparkling Pinot Noir Rose

Pours with an exuberant mousse which dissipates to reveal a damask pink tinged core that has a steady stream of bubbles coursing through it. Aromas of peach and strawberry mix with some baked bread, lees and delicate sherbet notes. Mouth watering pear and strawberry flavours carry an airy feel across the palate with notions of lees and raspberry also evident. Finishes dry with crisp, refreshing acidity and a nicely shaped conclusion.

Fizz made from Pinot Noir sourced from the Yarra Valley, parcels were fermented discretely and given five months on lees before the secondary fermentation. Dosage is seven grams/litre. A very pale orange pink with notes of florals, redcurrants and spices, with hints of cherries and strawberries. This is a gentle and delightfully elegant style of fizz, with a creamy texture that is finely balanced with a crisp finish. There is a chalky, minerally backing here with a lingering finish. Delicious drinking now and for the next couple of years. Drink 2024-2026.
