'Farigoule', which means 'thyme' in Provence, has been employed to create this wonderful liqueur with which to finish the meal on a light, fragrant and sweet note. Fresh, young, wild thyme is picked at the beginning of summer and combined with other botanicals including angelica and sage. It's recommended served on ice, drizzled over a lemon sorbet, with coffee at the end of a meal, or in cooking a grilled chicken or in a sauce accompanying rabbit. We can't wait to further experiment with this superb new discovery!

Tasting note: Pours a viscous pale yellow green with a pale straw hue. The top note of fresh cut thyme subsides to reveal nuances of aniseed, peppermint and some faintly resinous notes (beeswax?) making for a complex bouquet. Entry is silky, medium sweet; expanding into a semi sweet yet delightfully fresh herbal / anise combo with notes of thyme and sage returning at the finish. Perfect balance. Concludes dry with subtle herb flavours demonstrating terrific persistence. 40% Alc./Vol.
