Guiborat Prisme.17 Grand Cru Blanc de Blancs Champagne
Champagne Guiborat is based in the grand cru village of Cramant, right in the heart of the Cote de Blancs. Much of their vineyards are planted in the deep chalk soils of Cramant and Chouilly grand crus, along with a parcel in the Marne near Epernay where they have some Pinot Meunier. While they own 8 hectares of vineyards, three quarters of their production is sold off to Laurent-Perrier, keeping only the best parcels for their own label.
Prisme is a 100% Chardonnay cuvee exclusively from old vine parcels owned by the family, namely Les Bergeries (Cramant, planted in 1984), Le Mont Aigu (Chouilly, planted in 1970 and 1979), and Les Caurés (Chouilly, planted in 1946 and 1988). The emphasis with Prisme is to display the transparent nature that the chalk soils of Cramant and Chouilly lend to these wines. Vinification occurs in 96% stainless steel, with the balance in neutral oak barrels. Following 7 months on lees the wine is assembled and sees a further 44 months on lees in bottle, and 12 months resting in the cellar before release. Dosage is a very low 1.5g/L.

The NV Extra-Brut Prisme . 17 is a taut, chiseled wine, based on the 2017 vintage with 13% reserve wines. Offering up notes of citrus zest, verbena, warm bread and fresh herbs, it's medium to full-bodied, elegantly textural and incisive, with racy acids underpinning an attractive core of ripe fruit. Drink 2023 - 2029.
