Whiskey Hunt Australia's first barrel pick for 2023 has just landed. This time round it's a blend of straight ryes finished in an Oloroso sherry cask for nine months, selected by Master Distiller, Brendan Coyle. Since making tracks in Australia over the last decade, High West has become highly regarded for their distinctive rye bottlings. It was founded in 2006 by David Perkins and his wife, Jane. David, a former biochemist, was inspired to open his own distillery after seeing the parallels between the fermentation and distilling process and his own work in biochemistry during a trip to Kentucky. In 2004, David and his family relocated to Utah and distilling kickstarted in 2007. What was once a small operation in downtown Park City has grown to be an internationally-recognized, award-winning brand. This special bottling offers a novel, engaging, pepper-studded rye experience for fans of the category, starting out dry and savoury with layers of nutty complexity before finishing on a sweeter thread of dried fruits and apply-rye that resonates for over a minute.
