The InchDairnie Distillery was built around a mash filter that utilises types of grain other distilleries struggle to process. Installed before the walls and roof were built, this unusual system allows the extraction of more flavour but also more sugar, and from a variety grains. By combining the mash filter, a fermentation process that is reflective of the season and stills that allow the complex flavours to come through, the boast is that InchDairne can "...open up new corners of the flavour map, not yet reached by other distilleries."

Their inaugural release is named RyeLaw and is labeled as a single grain (yet it's made from both single farm malted rye and Spring barley); hammer-milled, mashed, outdoor fermented and matured in new charred oak casks with a claim to be the world’s only precision-distilled malted rye Scotch. It is arguably the cleanest, crispest and most refined rye-style on the planet, as though every grain has been polished before distillation. So graceful as to be almost sake-like, re-tasting reveals more of the rye's character as ryvita biscuits, caraway and peppermint. Effortlessly gliding through the mouth, the mid-palate is almost crunchy becoming bready through the the final stages. Even from the tiny sample we received, this has to be one of the most distinctive deliveries of the year. 46.3% Alc./Vol. 2022 bottling tasted. 

Other reviews... The inaugural release from InchDairnie Distillery is made from 53% malted rye and 47% malted barley, and has a nose of black currant taffy, toffee, vanilla, and punchy spices. Flavors of golden syrup and black currant lozenges, the rye spiciness takes center stage, riding over the creamy vanilla, clove, and toffee notes. This is a big whisky with big textures, showing lashings of caramel and vanilla on the finish. Quite a debut. 92 points - whiskyadvocate.com

Silky arrival; the barley and rye work well together, but water thins things. It might’ve been even better with a little more ABV, but pettiness aside; no water needed. There’s a hint of youth, although no way anyone is catching its five year age. Treacle appears along with the honeys and a maple syrupy feel, with a lick of cold espresso. Orange rind and plums too; stewed. Marzipan and almond biscuits, fresh ginger and dried green herbs. A medium-long finish leaves liquorice and saccharin, and that sense of light, savoury umami. Overall it’s a teeny touch woody, but not too much. I go in for another pour, you know, just to double check these notes... Very good indeed. - dramface.com
