Served on all first-class flights of ANA (All Nippon Airways), Manzairaku Kaga's mild aroma and intense umami taste have won it several awards. It's a lightly carbonated Umeshu with a low 7% alcohol, ideal as an aperitif or even during a meal. Although generally referred to as Plum Wine, the Ume fruit is closer to an apricot than what we know of as plums and possesses a substantially higher acidity which renders the ripe fruit (though edible) mostly unpalatable. Benisashi Ume is used here, a variety that grows exclusively in Kanazawa City (Ishikawa Prefecture) and in the neighbouring Fukui Prefecture.

Displays hints of copper and a soft pink blush in the glass. The nose opens with sweet brioche pastry and white chocolate, evolving into cranberry, red currants, and red plum notes. On the palate there's more familiar red plum falvours, supported by yellow nectarine and nougat. The flavours are precise and fresh, with a harmonious balance of spritz and sweetness that works beautifully together. This sparkling umeshu would be perfect as a conclusion to a meal, paired with fruit or a light dessert, yet it could also complement richer salmon dishes earlier on.
