First produced in 2004 to celebrate the house’s 80th anniversary, the Passion Extra Brut is now one of the most popular in their range. Aged for at least 4-5 years on lees, its made from a blend of 44% Pinot Noir, 38% Chardonnay and 18% Pinot Meunier with 25% of the wines matured in oak barrels.
A buoyant fluffy white mousse holds well over a pale straw coloured base that has pale gold tinged edges. Finely threading the core is a persistent bead. Emanating from the glass are classic aromatics of yeast lees, citrus, baked bread and chalk tinged rocks which are complimented by hints of dried honey and brioche. Possessing both richness and breadth the well formed palate is brimming with baked bread, yeast lees and citrusy brioche like flavours that have a creamy like texture. Some lightly honeyed cashew rounds out the crisp refreshing finish that’s both long and refined.

Some 25% of the vins clairs that compose Ployez-Jacquemart's NV Extra-Brut Passion were barrel fermented, and it's a richer, more vinous non-vintage blend that's aged—for four or five years—sur pointes rather than sur lattes to prevent excess. Offering up an inviting bouquet of lemon, orange oil, crisp yellow orchard fruit, toasted nuts and honeycomb, it's medium to full-bodied, deep and intense, with a racy spine of acidity, fine concentration at the core, and a penetrating, sapid finish. Drink 2020-2035.
