Porfidio Triple Distilled White Rum (700ml)
At first thought, super premium Rum coming from the state of Jalisco, Mexico seems a strange concept. Jalisco is home to the town of Tequila, and is blessed with fertile volcanic soils suitable for the cultivation of Blue Agave - the succulent plant that forms the base of Tequila. One must the wonder, why Rum?
Three elements form the foundation of Rum. Sugar, Distallation, Oak maturation. The better the quality of these elements, the better the outcome: There's no shortage of distilling knowledge in Jalisco, given the strong Tequila Industry that thrives there. There's reliable, good quality sources of American oak, which is also used for maturing Tequila. The real surprise is that sugar is Mexico's largest industry, employing approximately 2.5 million people across the nation. It turns out, that Sugarcane, like Blue Agave, thrives in these fertile volcanic soils.
Porfidio Rum is produced from hand-harvested, individually selected sugarcane. The fields are located about an hour's drive from the distillery, which ensures that fresh cane arrives in peak condition. These fields are never burnt prior to harvest. The Rum is triple distilled, then aged for around three months in older American oak barrels then filtered to remove colour. The results simply speak for themselves.
Tasting Note: An intense sniff! An extraordinarily complex nose that takes quite some time to unfold and to fully appreciate. The initial aroma reveals a strong white pepper character followed by notes of lemon meringue, sweet biscuit and lemon rind. Yet, you get the feeling that's not the entire story. Upon further nasal investigation, notes of salty green olive emerge. The palate is best described as explosive, with a full bodied, initially prickly entry, quite unlike anything we've ever experienced in White Rum before. Sweet green capsicum flavours are supported by a white pepper backbone and a slightly oily mouthfeel. Exceptionally long aftertaste of lolly spearmint leaves and spice. Given the beguiling complexity and changing character of this Rum it's one of the more difficult spirits to describe. Those of you who believe Wray and Nephew is the be all and end all of White rum, guess again. 45.0% Alc./Vol.
