Mexico has a long history of distilling but they're only just catching on to whisky, capitalising on the nation's sixty-four native varieties of corn. Mash bills are upwards of 70% corn, sometimes 100%, and the styles and production standards often reflect American whiskeys - but that's not necessarily the case. Instead of pretending to be Bourbon, Mexican producers are seeking to highlight the culture of Mexico as the ancestral home of maize with lighter-bodied, elegant sipping whiskies and restrained barrel input. To date, there are over a dozen distillers and even more brands, the vast majority of which have diversified from mezcal to experiment with the country's heirloom varieties. The Koch Group is one. They began producing Whisky Prieto and Prieta in 2018 under the guidance of Txomin Alcorta, a French Master Distiller with experience in Cognac. Their whisky is 100% corn-based. Fermentation takes place in stainless steel with copper stills employed "...in the style of cognac and mezcal". 43% Alc./Vol.

Notes from the producers... Aromas: Red apple with honey, vanilla and hazelnut notes with a hint of dried peach. On the finish tiramisu and a delicate scent of caramelised wood. On the palate: Creamy texture, combination of Neapolitan custard and cinnamon. Dry finish with notes of maples syrup and cherries. Slight pleasant acidity and hints of tobacco in the aftertaste.
