Risky Business Prosecco
A buoyant fluffy white mousse subsides to reveal a pale straw coloured base that has a steady stream of bubbles coursing through it. Distinct pear and ripe apple scents jump out of the glass with some quince and sherbet like notes also evident. Light and airy across the palate pear, green apple and citrus flavours overlay a delicate baked bread background. Vivid acidity leads into a mouth-wateringly fresh aftertaste.

Risky Business has been sourcing prosecco from the King Valley for nearly 10 years. There's an enviable consistency to style. It's seen here from the bright, just-cut green apple and citrus summery scents through to the utterly delicious lemon sorbet crunch and bubbly zing on the palate. And dry ... prosecco looks so good when it's dry and clean-cut.
