Followers of the English Whisky Co. will know they mature their single malts in a diverse range of casks - including some which previously contained the beautiful, sweet, rich dark sherry known as Pedro Ximenez. A few years back, the distillery decided to take the sherry as well! They then added some single malt to it and left it in the casks to continue maturing for another couple of years. Described as liquid Christmas pudding, the resulting drink is a wonderful 'fortified' style, that can be enjoyed chilled or poured over ice cream. 20% Alc./Vol.
