This is the sister bottling to barrel HHF582B. Released in March 2021, the yield was 278 bottles at a natural strength of 63.3% Alc./Vol. Originally only available via ballot, it is one of two Larks with an extraordinary heritage, crafted during Bill Lark’s tenure at a renowned, neighbouring Tasmanian distillery. The spirit spent its first fifteen years relatively undisturbed in French oak casks before current Head Distiller, Chris Thomson transferred it into a 200L Bourbon cask (HHF585A) for its final four years in order to soften the mouthfeel and add layers of flavour. In his own words, the end result is “a superb single cask" and one of the oldest Larks to ever make it to market.

Notes from the producers... Medjool dates, fig, coconut, cloves, and toasted walnut. An immersive experience reminiscent of pipe tobacco and perfectly-seared steak.
