Timothee Stroebel Triptyque 14-16-17 Brut Nature Champagne
Timothée Stroebel is a bright star among the new guard breathing life into Champagne. Following his wine study and a winemaking stint in Burgundy, Timothée set about rejuvenating his families holding of vines in the small Montagne de Reims village of Villers Allerand. After 10 years of diligent work he achieved his goal of organic certification in 2014. Winemaking is very intuitive, and he is as likely to make a still Coteaux Champenois as he is Champagne. In the cellar there are no additives used except for a very low amount of sulphur when needed. Alcoholic and malolactic fermentation happens naturally in barrel, and the wines are neither filtered of cold stabilised before bottling with zero dosage.
Triptyque is a blend of approximately 55% Pinot Meunier, 35% Pinot Noir, and 10% Chardonnay, from three plots of varying soil type, and three vintages.
