Wakaze 'The Classic' Junmai Sake (720ml)
Wakaze blends tradition and innovation, crafting sake with a uniquely global perspective. Their 'Classic' Japan is brewed in Yamagata to the same specifications as its Parisian counterpart, using table rice with a minimal polishing rate (90%) and White Koji mould for a touch of sweetness and bright acidity. The result is a creamy, umami-rich sake that reflects Wakaze’s modern approach.
Tasting note: Pale lemon in the glass with a faint cloudy haze. Aromatically the nose leans savoury, opening with dried mushroom, rice bran, and yoghurt, with subtle dried fruit lurking beneath. Given time and with some warmth the fresh green fruit begins to emerge. The palate takes a more familiar approach, offering richer notes of earthy rice, cream, and candied ginger, complemented by hints of green melon, pawpaw, and white strawberry. A touch of sweetness on the finish adds balance, preventing the savoury elements from dominating. You could serve this at various points in the meal as it would compliment starters like tempura prawns or vegetables, or later alongside warm meat dishes.
Serve chilled or at room temperature.
