A new Akashi matured in American oak Japanese Shochu casks for around two years, then aged in bourbon casks before finishing in sherry casks for twelve months. The resulting whisky is said to have a fruity and slightly sweet nose, the palate is fresh with oak, and hints of peat with a spicy and sweet finish.
